I absolutely love putting infusions like this together in a tea infuser pitcher (or bottle) and refrigerating overnight because there’s something wonderful about opening the fridge the next day to find something fresh, healthy, and delicious just waiting for you to drink (with no packaging waste whatsoever). Ingredients
To make a three-cup-sized infuser pitcher, you will need:
1 heaping Tbsp. loose white tea (or Poetic Tea’s “Villanelle”)
3 c. boiling water
9 fresh raspberries
3 fresh rosemary leaves
1 Tbsp. honey (adjust for preference)
or… To make a standard 8-cup pitcher, you will need:
3 level Tbsp. loose white tea (or Poetic Tea’s “Villanelle”)
3 c. boiling water/5 c. cold water
1c. fresh raspberries
1 small sprig of fresh rosemary
3 Tbsp. honey (adjust for preference)
Infusing Solutions
This strong, but lightweight glass tea infuser pitcher holds three cups of tea and is made from borosilicate glass so it can withstand rapid temperature change. Pour boiling water right over a rounded tablespoon of loose tea, fill to the top, brew and enjoy!

The Process
Here’s the scoop:
If you’re using an infuser pitcher:
Measure loose tea and rosemary into infuser bucket and pour boiling water over leaves;
After three minutes, add raspberries and honey, give a quick stir, and refrigerate overnight;
Once you’re ready to enjoy, give the berries and tea leaves another stir while they’re still in the infuser bucket and some extra pink color and flavor will be released before you remove the bucket to strain;
Pour over ice and garnish with fresh rosemary, raspberries, or an orange slice if desired.
If you’re using a standard pitcher:
Measure loose tea and rosemary into extra large tea bag (or multiple small bags) or into a large infuser ball;
Pour three cups of boiling water over and brew for three minutes;
Add honey and raspberries and stir;
Fill pitcher to the top with fresh, cold water and refrigerate overnight;
Remove tea bags/infuser ball and pour over ice (use a lid or over-glass strainer if you don’t want the raspberry pieces to come out);
Garnish with a fresh sprig of rosemary, fresh raspberries and even an orange slice if desired.
Pro Tip:
Make a batch of white tea, add raspberries to an ice cube tray, and fill with tea. Freeze to add fruity tea cubes (instead of boring old ice cubes) to your infusion when you’re ready to drink. Yum!
